Thinking about opening a restaurant? Don’t do it write Nina and Tim Zagat on the opinion page of today’s Wall Street Journal. The pair says not many people realize that cooking for a few friends is a wholly different endeavor than running a successful restaurant. You also must have a “knack for real estate,” be a natural leader, have an exceptional memory, and be friendly without appearing “unctuous or arrogant.”
