Beef is still what’s for dinner—it may just be called something unfamiliar. The Wall Street Journal says there’s a new crop of steak names floating around on menus and in artisanal butchers. Chuck is now a “flat iron filet” and a “coulotte steak”? Just a fancier name for a top cut of sirloin. The new names are a way to keep consumers biting, even as the price of beef soars.
