Coconut Oil “New Darling” of Health Food World

Just in case you didn’t get the memo: coconut oil is now good for you. The New York Times says the oft-maligned fat has gone through a transformation recently, from “the devil himself in liquid form” to the “darling of the natural-foods world.” The Times says previous research about coconut oil may have been biased by using “partially hydrogenated” varieties. Another reason for its recent elevated status: vegans. As vegan cooking becomes more mainstream coconut oil, which is a staple for bakers who want to avoid using butter, has followed suit.
